Ketagihan makanan cepat saji

What to Eat for Strong and Healthy Hair and Nails

Strong and Healthy Hair and NailsCertain foods can improve the way you look. The following nutrients will give your hair and nails extra luster, strength and shine.

Biotin (a.k.a. vitamin H) can improve hair that is splitting or thinning as well as strengthen weakened nails. Taken with zinc and the corticosteroid clobetasol propionate, biotin has even been used to treat alopecia, an autoimmune skin disease marked by the loss of hair. A deficiency in biotin may result in brittle hair or even hair loss. An easy way to remember: The H in vitamin H stands for hair. Try: Bananas, beans, cauliflower, eggs, lentils, peanuts and salmon.

Omega-3 Fatty Acids
To get shinier hair, introduce more omega-3s into your diet, which “help support scalp health and may give your locks extra luster and shine.” The three active ingredients—alpha-linolenic acid, eicosapentaenoic acid and docosahexaenoic acid—are all essential fatty acids and "are important components of the stratum corneum, which is the outermost layer of the epidermis that contains keratin and has water-holding capabilities. Deficiency in essential fatty acids can result in dry scalp or dandruff." Try: Eggs, flaxseed, fish oil, mackerel, salmon, sardines, spinach, tuna and walnuts.

Protein
Protein intake is important for many reasons, notably when it comes to hair and nails. Both "are made of structural proteins known as keratin, so adequate dietary protein is important for providing the building blocks for growing strong hair and nails, lean meats are the easiest way to pack protein into your diet—just make sure to steer clear of any that are overly fatty. Try: Chicken, eggs, lean red meats, lowfat dairy, nuts, seafood, soybeans and whole grains.

Vitamin A
Vitamin A helps produce a conditioning substance for the scalp known as sebum, which keeps hair looking and feeling healthy. In addition to these beauty benefits, this vitamin contributes to better eye health and immune system function, which keeps you vital and strong from head to toe. Try: Apricots, broccoli, cantaloupe, carrots, Cheddar cheese, egg yolks, mangoes, oatmeal, spinach and sweet potatoes.

Zinc
Zinc is another nutrient active in helping the immune system function properly, and DiBona also notes that it plays an important role in the formation of your connective tissues. Try: Cashews, green beans, lean beef, lobster, oysters and soybeans.

Forever foods that can outlast you

HoneyAccording to Janice Revell, co-founder of StillTasty.com, you'll be shocked by what you really don't need to throw away." What we do is often the opposite, we don't give a thought to stuff sitting in the kitchen cupboard or we automatically throw out anything that's been in there longer than we can remember. Here as list of things that last longer than you ever realized:

1. Sugar
Regardless of whether your sugar is white, brown, or powdered, it will never spoil because it doesn't support bacterial growth.

The challenge with sugar is to keep it from hardening into chunks. To keep sugar fresh, store it in an airtight container or seal it in a plastic bag. If your brown sugar is more like a brown rock, you can revive it with just a minute in the microwave on low heat.

2. Pure vanilla extract
If you have pure vanilla extract in the back of the cupboard, there's no need to throw it out because it lasts forever. It may be more expensive than its imitation counterpart, but its shelf life certainly outweighs the extra cost.

Keep that vanilla flavor at its best by sealing the botttle after each use and storing it in a cool, dark place.

3. Rice
White, wild, jasmine, arborio and basmati rice all keep forever so there's no need to throw them out. Brown rice is the one exception because it has a higher oil content so store it in the refrigerator or freeze it to maximize its shelf life. Once you've opened a bag or box of rice, move it to an airtight container or resealable freezer bag to keep it fresh.

4. Corn starch
You can thicken gravies and sauces for years with just one box of corn starch because it keeps indefinitely. Store this kitchen staple in a cool, dry area and be sure to reseal it tightly after each use.

5. Honey
Whether you use it in your tea, on your toast or as an alternative sweetener, that jar of pure honey is good forever. It may get grainy or change color, but it's still safe to eat — and delicious — because its antibiotic properties keep it from spoiling.

You can help keep it fresh by storing it in a cool area, and you can improve the quality of crystallized honey by placing the jar in warm water and stirring it until the grainy parts dissolve.

6. Salt
The contents of your salt shaker will never spoil, regardless of whether it's basic table salt or sea salt. Simply store it in a cool, dry place and salt will keep indefinitely.

7. Corn syrup
If you come across a years-old bottle of corn syrup in your pantry, don't throw it out. This sweetener keeps indefinitely as long as you keep it sealed and store it in a cool, dry area.

8. Maple syrup
What good are pancakes or waffles without maple syrup? Luckily, this flavorful syrup will never spoil if you refrigerate it or freeze it. For long-term storage, seal it in an airtight plastic container and freeze it.

"The freezer is such a useful tool that can really save you money because there are very few foods that don't freeze well," says Janice Revell of StillTasty.com.

9. Distilled white vinegar
This wonder product can be used for everything, from making marinades and salad dressings to cleaning house and doing laundry. But the best thing about distilled white vinegar is that it lasts for years. Simply close it tightly after each use and store the bottle in a cool, dark place.

Consume Too Much Good Things Can Be Bad

There are some things that you just can't have too much of. It can be damaging if you consume too much. Below are some surprising examples.

Vitamin C is an essential nutrient that needs to be ingested every day because our bodies don't produce or store it. What your body doesn't need is flushed out in your urine, but it's still possible to take too much. Mega-doses of vitamin C can cause gastritis, nausea, diarrhea, and kidney stones, according to the Mayo Clinic. In rare cases it can make you tired and dizzy.

Protein helps build muscle, blood, skin, hair, nails, and more. There is a long list of health benefits associated with eating proper amounts of protein from providing energy to keeping the immune system in good shape. But eating too much protein can cause kidney problems, dehydration, and osteoporosis, and it may be linked to certain cancers.

Soybeans are popular because they boast many health benefits from lowering cholesterol to reducing the risk of certain types of cancer, but that doesn't mean you should eat soy foods with abandon. Some compounds in soybeans mimic the hormone estrogen. Animal studies suggest that large amounts of soy might reduce fertility in women, trigger early puberty, and disrupt development in fetuses and children.

Exercise is something most of us don't get enough of. About 30 minutes of moderate exercise a day is enough to ward off chronic diseases such as diabetes, improve mood, and deliver a whole bunch of health benefits. Shoot for at least 60 minutes a day, 5 to 6 times a week if you want to get the most benefits from exercise. Is there such a thing as too much exercise? Yes, and it can lead to injuries, exhaustion, depression, and long-term health problems.

The same rules apply for things that are traditionally thought of as being bad for you. Moderate amounts of dark chocolate, coffee, and red wine can be good for you, so go ahead and indulge every now and then.

Five Tips Prevent Memory Losses

Tips Prevent Memory LossesMost of the time memory losses can be triggered by too many tasks at once (multitasking) or effect from menopause, but do not give up by accepting it as a natural thing. This article will explain to what you should do so memory losses can stay away from you longer than you expected:

Flossing every day
. The formation of plaque on teeth is not good for our brain, and then the memory. According to Michael Roizen, MD, co-author YOU-The Owner's Manual: An Insider's Guide to the Body that Will Make You Healthier and Younger, plaques that form between the teeth can trigger an immune reaction that attacks the blood vessels, so blood vessels can not send nutrients to the brain. The solution? Do not forget flossing every day. Keep forgetting? Then keep your floss in your makeup case, it would be easily seen.

Multitasking at the gym. Just as body exercise that keep your body in good shape, so does exercising your brain, it will be in good shape too. Do both it will bring a double benefits. How to multitasking at the gym? Try to fill in a crossword puzzle while pedaling stationary bikes or listen to language lessons or iPod while running. Scientists say, train your body and mind at the same time can rejuvenate brain cells. Do not like multitasking? Fill out the crossword puzzle right after the exercise, when the brain is still really energetic.

Consume more fish. Omega-3 contained in fish such as salmon and fortified foods such yogurt for instance, is a super food for memory which is the DHA, a type of omega-3, effectively reducing inflammation and improving arterial nerve protective layer. Again, according to Roizen, will reduce memories losses due to age factor, reducing the risk of dementia, depression, and accelerate the intellect.

Sports. Increasing the heart rate 3 times a week for 20 minutes, even just walking, will increase the oxygen in the brain that helps the growth of new cells. According to Sam Wang, Ph.D., associate professor of neuroscience at Princeton University, aerobic exercise is as effective as the other brain training activities. You don’t even have to go to the gym. Studies show that physical activity of moderate to strong, even just once a week, proved to be able to help you maintain cognitive function up to 30%.

Use chopsticks. According to Maoshing Ni, PhD, author of Second Spring: Dr. Mao's Hundreds of Natural Secrets for Women to Revitalize and Regenerate at Any Age, studies show that engaging in activities that involve the fingertips will directly stimulate the brain. Activities with your fingertips, such as using chopsticks, spinning, or even twirling a pen or pencil between the fingers can also help the brain; all this fingertips activity helps blood circulation to brain. As we all aware good blood circulation will help remove waste products which prevent nutrients reaching the brain.

Study shows size zero girls 'less attractive'

size zeroOne recent research has suggested that young men find "normal" sized women more good-looking than size zero celebrities. In addition, researchers also found that size-zero people are often associated to unhealthy look.

The survey was conducted by involving male students at one popular university, they were asked to rate female faces for attractiveness and health. Girls with an average weight and build were ranked as being the most attractive and healthy as the result of the study.

The research was performed by a team from the university; they asked 84 female students a variety of questions about their health, also took their blood pressure and take pictures of them. These pictures were then shown to a group of male students who were asked to rate them for health, and attractiveness.

According to the study, people in the normal weight range were judged healthier and more attractive than under or overweight individuals. This should be a clear message to young women, who believe being underweight is considered to be attractive.

8 Foods That Help You on Fat-fighting!

Fat FightingFat-fighting is something we hear almost everyday, if you are dealing with fat fighting right now or just want to have a good and healthy life, it is strongly recommended always to have the following items added into your daily meal.

Almonds, yummy nuts that are high in alpha-linolenic acid, which can accelerate your metabolism of fats. In fact, dieters who ate 3 ounces of almonds daily slashed their weight and body-mass index by 18 percent, while those who skipped the nuts reduced both numbers less— just 11 percent—a study in the International Journal of Obesity revealed. Chomp almonds à la carte (limit yourself to 12 per serving to keep calories in check). Go nuts!

Berries
are nature's candy! Turns out they're also your body's best friends. Strawberries, raspberries and other vitamin C–spiked fruit can supercharge your workout, helping you burn up to 30 percent more fat, research from Arizona State University at Mesa has found. If they're not in season, buy the little gems frozen in a bulk-sized bag so you'll always have them on hand to whip up a Berry Bliss Smoothie or Strawberry-Sunflower Pops, regardless of whether berries are in season.

Cinnamon
Adding 1/4 teaspoon to your plate may prevent insulin spike—an uptick that tells your body to store fat. Sprinkle it on your morning cereal or coffee or on your yogurt in the A.M., or savor it in Apple-Cinnamon-Raisin Oatmeal.

Mustard
, it's heaven on a soft pretzel, but mustard may also be a weight loss wonder. Turmeric, the spice that gives mustard its color, may slow the growth of fat tissues, a study in the journal Endocrinology finds. Use it on sandwiches instead of mayo, or sprinkle turmeric on cauliflower pre-roasting to give it a kick. Try it on tuna salad—I promise it adds zest.

Oranges, this citrus fruit, which contains fat-blasting compounds known as flavones, deserves to be your main squeeze. Women who ate the most flavones had a much lower increase in body fat over a 14-year period, a study in The American Journal of Clinical Nutrition notes. Eat oranges sliced or swig fresh OJ (including pulp!) to get the best benefit from the fruit.

Soybeans, reason to toss a half cup on your salad? Soybeans are rich in choline, a compound that blocks the absorption of fat and breaks down fatty deposits. Oh, and they're addictively delish! But if breast cancer runs in your family, experts suggest you should talk to your doc before adding soy to your diet.

Sweet potatoes, the colorful spuds' high-fiber content means they keep your insulin steadier than their white sisters, which means less fat packed on your hips, research finds. Top a small baked tater with lowfat cottage cheese for a tempting side dish, or whip up Miso Soup With Sweet Potato Dumplings.

Swiss cheese, Calcium-rich foods reduce fat-producing enzymes and increase fat breakdown, and Swiss has more calcium than many of its cheesy peers. Choose the reduced-fat variety, such as Sargento. Slip it into your sandwich, put it on top of high-fiber crackers or use it for a healthier grilled cheese. Yum!

Diet Myths Exposed

If you're so committed to losing weight that you refuse to eat a baked potato for fear of eating empty carbs, you might be missing out on important nutrients and backing your diet into a corner. Open your mind to the truth behind these diet and weight myths and learn how to enjoy some of your favorite foods again.

Myth 1: Potatoes and bread are fattening.
Actually: It's just the opposite. Starchy vegetables and bread (whole-grain bread, that is) are quality carbs needed to fuel every part of you, from your brain to your muscles. What gets you into trouble is how you eat them: Smear butter on a slice of whole-wheat bread or deep-fry potatoes and you can double, triple, or quadruple the calories.

Myth 2: Drinking a glass of water before a meal curbs appetite
.
Actually: Yes and no. Water tames appetite if it's incorporated into food, such as soup, or a thick drink, like V8 100% Vegetable Juice. Apparently, when water is bound to food, digestion is slower, explains Elizabeth Somer, RD, author of 10 Habits That Mess Up a Woman's Diet.

That's why women in one study found chicken-rice soup more satisfying than chicken-rice casserole and a glass of water -- even though the soup had 27% fewer calories! One exception to this rule: It's easy to confuse hunger and thirst, so if you find yourself craving something -- but what? -- drink a big glass of water and wait a few minutes. You may find that's what your body really wanted.

Myth 3: Shellfish is high in cholesterol.
Actually: On the one hand, it's true: Just 3 ounces of shrimp delivers more than a third of your daily cholesterol. But there's a surprising flip side to this story: Shrimp is low in saturated fat -- the kind that becomes artery-clogging bad cholesterol -- and has a smidgen of heart-healthy omega-3s. In fact, University of Southern California researchers discovered that eating shellfish, such as shrimp, every week reduced heart attack risk by 59 percent!

Myth 4: The occasional burger and fries won't kill you
.
Actually: It depends on your definition of "occasional." If occasional means every Friday night and then some, well, you may be pushing it. But if it means every few months, and you're fit, and you've got good numbers (i.e., weight, waist size, cholesterol, blood pressure), AND you're chowing down on vegetables, whole grains, nuts, and other nutritious fare most other days, hey, you'll live. But few of us are that perfect. If you do occasionally indulge, offset the effects of a fat fiesta with a brisk 90-minute walk afterward.

Green Tea Booster

Green Tea BoosterDid you know that most of the free-radical fighters in green tea never make it to your bloodstream? But there's a solution.

To get a better grasp on the healthy catechins in your green tea, flavor your cup with a squeeze of citrus juice.

Green Tea Booster
Catechins -- the antioxidants in green tea famous for lowering your risk of chronic disease -- quickly lose their power in your intestine. In fact, as much as 80% of the catechins in green tea are never absorbed. The solution to boosting absorption, researchers recently found, is as simple as flavoring your tea with freshly squeezed and strained lemon, orange, lime, or grapefruit juice.

Taking Tea with C
The vitamin C in citrus may help with absorption by increasing the acidity in your small intestine. Other unidentified substances in the juice probably lend a hand, too. Researchers found a 50-50 mix had the greatest catechin-preserving effect, and lemon did it best, closely followed by orange, lime, and, in last place, grapefruit.

If you do take steps to boost the power of your green tea, you may even get a few added benefits.

* It may help you lose weight. At least one study shows green tea can stimulate moderate weight loss.
* It may help keep your knees young and strong catechins fight inflammation and arthritis.
* It can help your skin look great if used in conjunction with an antioxidant cream. Dab it on.
* It can help you stay sharp -- try 2 cups a day to see benefits.

Benefit: Getting the right amount of antioxidants through diet or supplements can make you 6 years younger.

Salt is addictive!

salt crystalAt a congress of the American Heart Association at the University of California, the scientists demonstrate that cardiovascular diseases can be avoided, would the daily salt consumption by only a single gram reduced. Who salt consumption as much as three grams daily reduced, then the risk of heart disease and a resultant decrease significantly earlier death.

The salt consumption is too high

Salt is widely available, is not expensive and is usually considered "basic spice" use. Why? U.S. scientists found a new, surprising reasons.

Salt is addictive!

The researchers assume that the functional processes in the brain of animals during the withdrawal of salt in the human brain comparable to expire. More than that: The withdrawal of salt leads to the same brain responses as the withdrawal of drugs.

Attention - Ready Meals!

From a human behavioral addiction is when a drug - in spite of the knowledge of their risk - will be used. And that is exactly what happens in the use of salt.

That too much salt is harmful, hear and read a long time and frequently enough. Despite changes in the much too high salt consumption does not. Even if the freshly cooked meals less salt would have to be taken into account that absolutely each finished dish, each sausage, cheese, etc. everyone already has a high proportion of salt. Only he who renounces this food - or at least severely restrict - his salt intake may be even more determined.

The correct quantity in the right quality

Salt is just in too large quantities and in a poor quality (zBraffiniertes salt) unhealthy. A fundamental waiver is therefore not meaningful. However, the high proportion of salt already spiced food supermarket, and when cooking very little salt, and instead many fresh or dried herb seasoning.

Also on the quality of the salt should be strictly respected. Avoid consistently on the refined table salt - especially those who artificial iodine has been added - and use only natural stone, crystal or Ursalze. These salts are essential for your body and contribute to the health of your body.

A miracle chocolate from Switzerland?

alnect komputerIt sounds incredible: the Swiss manufacturer Barry Callebaut has developed a chocolate, the heat-resistant and low in calories yet to be.

The internal "Vulcano" called product melts, according to "mirror" only from 55 degrees Celsius and has only about a tenth of the calories of conventional chocolate. This would be a dream of many sweet tooth but also the manufacturer will be fulfilled.

But critics munkeln now that the taste is on the route could remain. The company Barry Callebaut, which mainly supplies Nestle and Cadbury, will "Vulcano", however, a brittle character.

Obviously, the Swiss also know another problem: Although the body temperature around 37 degrees Celsius is, the candy, according to the Austrian online magazine "Heute.at" still melt on the tongue. Instead of body heat is so taken by Barry Callebaut, the saliva in the mouth of the chocolate-lovers assume.

With "Vulcano" plans in the world market leader in Switzerland, according to "Heute.at", the new markets in China and India to conquer. There is obviously an advantage if the cocoa dainty not already at 30 degrees Celsius liquefied.

"The idea sounds fascinating," says Daniel Bürki, financial analyst at Zürcher Kantonalbank the "mirror". But nor is Bürki skeptical: "Past experience has shown that heat-resistant chocolate taste with conventional products could keep up."

On attempt to create heat-resistant chocolate, many companies have already failed. For example, received U.S. producer Hershey "mirror" in the Second World War, according to mandate, as nutrient and temperature resistant panels produce. Since the production up to this point had been geared, liquid chocolate into molds to pour Hershey got tough with the newly developed mass apparently his problems. Finally, the Hershey employees the material with the need to manually edit.

Thus came the "Mirror" that rock hard, rectangular bars agreement, their taste and consistency of the U.S. firm over time, continuously improved. Thus, Hershey but no commercial success landing.

No wonder then, that a financial analyst Bürki has his doubts: the market and hence the critical test for chocolate lovers is "Vulcano" before.

Simple Ways to Supercharge Your Brain

Have you ever felt exasperated when you bumped into someone at the store but absolutely couldn't remember their name? Sure, it happens to all of us.

Despite being the strongest computer on the planet, our brains do lapse. Here are some things you can begin doing as soon as today to begin the great brain tune up:

Eat Almonds

Almond is believed to improve memory. If a combination of almond oil and milk is taken together before going to bed or after getting up at morning, it strengthens our memory power. Almond milk is prepared by crushing the almonds without the outer cover and adding water and sugar to it.

Drink Apple Juice
Research from the University of Massachusetts Lowell (UML) indicates that apple juice increases the production of the essential neurotransmitter acetylcholine in the brain, resulting in an increased memory power.

Sleep well

Research indicates that the long-term memory is consolidated during sleep by replaying the images of the experiences of the day. These repeated playbacks program the subconscious mind to store these images and other related information.

Enjoy simple Pleasures
Stress drains our brainpower. A stress-ridden mind consumes much of our memory resources to leave us with a feeble mind. Make a habit to engage yourself in few simple pleasures everyday to dissolve stress from your mind. Some of these simple pleasures are good for your mind, body and soul.

* Enjoy music you love
* Play with your children
* Appreciate others
* Run few miles a day, bike or swim
* Start a blog
* Take a yoga class or Total Wellness routine

Take Vitamin B-complex

Vitamin B-complex strengthens memory power. Eat food and vegetables high in Vitamin B-complex. Stay away from the starch food or white bread, which depletes the Vitamin B-complex necessary for a healthy mind.

I don't believe these are that tough. If you find yourself increasing stumped, give a couple of thes

Do You Know Your Brain Foods?

Do You Know Your Brain Foods? It appears there may be some association between the foods we eat and the power of our brain. Just like the rest of our bodies, the brain reacts negatively to a constant intake of high-fat and junk foods and prefers to be nourished by a well-balanced diet.

Studies have documented the benefits of omega-3 fatty acids, commonly found in fatty fish, in lessening the damage wrought by dementia. One study showed that eating at least one fish meal per week may significantly lower the risk of developing Alzheimer's disease.

Fish is not the only food that has been linked to improved brain power. There are also benefits to eating a balanced diet rich in fruits and vegetables, whole grains, and fiber. Other touted brain foods are the brightest colored fruits and vegetables, such as blueberries, strawberries, prunes, raspberries and blackberries, because antioxidants found in them have been linked to improved memory. In addition, foods containing B vitamins or magnesium are crucial to ensuring normal brain and nerve function. Both of these nutrients are often found in whole grains and in enriched and whole grain products such as bread, rice, pasta and fortified cereals.

Finally, remember that just like the rest of your body, your brain needs energy, which it prefers to get from glucose. This may be one reason why some people who follow a low-carbohydrate diet report feeling sluggish. Just like every other aspect of nutrition, balance and moderation are the keys.

10. Stay hydrated. About two-thirds of our body is water, and dehydration can contribute to reduced energy levels. About 80% of the fluid we consume comes from the fluids we drink, and the other 20% comes from foods. Always drink when you are thirsty, and have water available during the day to hydrate regularly.

Everything You Need to Know About Steak

SteakWhy Beef is Aged, and How: Beef must be aged to allow natural enzymes to break down fibrous connective tissue that holds the muscle together. There are two ways to self-tenderize: · Dry aging: Expensive and time consuming. The beef is stored in temperature- and humidity-controlled coolers for up to six weeks. Moisture evaporates, improving texture and concentrating flavor. Between the evaporation and trimming of the thin coating of mold that develops, there's weight loss of up to 20 percent. · Wet aging: The beef is refrigerated in vacuum-sealed plastic and allowed to tenderize in its own juices. No evaporation means no moisture is lost. Less waste but also less concentrated taste.

Some Types of Beef You Should Know About: Rare "red" cattle (the same breed that produces Kobe beef) raised in Texas by HeartBrand Beef--the only herd outside of Japan. They started with eleven head of cattle, which have been guarded by armed Texas Rangers for the past fourteen years while the herd has grown to more than five thousand. (heartbrandbeef.com) · Grass-fed: Healthier but, some say, less flavorful than corn-fed. Raised in open pastures. Not necessarily organic. (Grain-finished cattle--which are switched from grass to grain for the last few weeks before slaughter--develop more marbling.) · Heritage: From rare heirloom breeds, pasture-raised on small farms without the hormones or pesticides used in conventional agribusiness. · Angus: Aberdeen-Angus is a pure breed found in the U. S., England, Scotland, and Ireland. Certified Angus Brand is a brand name and may or may not include meat from Aberdeen-Angus.

The Grades of Meat: Prime: What you want. Typically found only at fine butcher shops, its interlacing of intramuscular fat--like a cobweb--assures tenderness, juiciness, and flavor. · Choice: Pretty good. More affordable and accessible than prime, moderate marbling still yields juicy, flavorful cuts. · Select: You're on a plane.

Generally Important Point (Cooking): Cooking times in recipes are predicated on starting with meat that's not too cold. All steaks should be taken out of the refrigerator at least thirty minutes before cooking.

The Pan: Lodge, an American maker of high-quality cast-iron pans for more than a hundred years, preseasons pans in the factory (its "Logic" line). The 10.25- and 12-inch, with 2-inch depth, are most practical--any larger and, depending on the size of the steaks, the oil could run off to the sides (where there's no meat) and burn. · The pan must be hot enough to sear the meat on contact, to prevent surface moisture from creating steam, which can prevent browning. · While some chefs say the pan should be "smoking" before adding oil, most call for the intuitive "hot but not smoking." Basically, really goddamn hot.

A Note on Salt: When you salt meat before cooking, you need a lot--and a lot falls off--so standard coarse salt will do. After cooking is the time to use fine sea salt. It's pricey, but the large, crackly flakes are intense, so you don't need much.

How to Use Oil: Before the meat goes in, the skillet should be filmed with oil--it should coat the surface without pooling. (You can add it when the pan is cold or hot.) At the right temperature, the oil will shimmer and gently ripple, as if you dropped a pebble into a pond. It shouldn't spatter or smoke.

The Finish: Meat's temperature keeps rising after cooking. Remove steaks from the heat when a meat thermometer reads 115 to 125 degrees. Then wait. During the all-important resting period, the temperature will rise to the medium-rare range, 120 to 130 degrees. · Get a good thermometer, preferably with a digital probe and large readout, like the Super-Fast Thermapen (four seconds with 1 percent accuracy). It is a potentially life-changing device. (thermoworks.com) · Always start with a recipe's minimum cooking time. You can't cook a steak less. · If you don't have a thermometer and you don't want to cut into the meat, press the cartilage at the tip of your nose. That's what medium rare feels like.

The High-Protein Diet

The High-Protein DietIf you like to keep on top of the latest news in the ever-expanding world of diets and weight-loss, you’ve definitely heard of the much-hyped metabolic typing diet, which claims to determine the rate at which every individual processes food and turns it into beneficial substances that help feed their body.

According to this diet, some people tolerate carbohydrates better, others thrive on proteins and this is what allows them to keep their weight under control. We will be dealing with the metabolic typing in a different article – now, however, it’s time to have a look at what a low carb, high protein diet can do for us in terms of weight management.

The simple answer is – it can do a lot. Protein foods are recommended when it comes to sticking to an eating plan aimed to help you lose those excess pounds – primarily because they need more time to digest and therefore keep us feeling full for longer. Generally, a normally balanced diet includes about 50% calories from carbs and 15% from protein.

However, if you're looking to restrict your refined carb intake and cut back on bread, rice, pasta, potatoes or cereal, you can try to aim for a different ratio – about 30% carbs and over 50% protein. Dairy is essential – you will be needing more calcium than usual if you’re following such an eating plan – and you can easily choose skimmed or low-fat versions over full-fat ones to keep the fat in check.

A high-protein diet involves eating mainly lean red meat, fish, chicken, eggs, dairy, seafood or tofu. Basically, two out of three daily meals would be made up of protein (usually the lunch and an early dinner) and one small meal with a small amount of carbs – cereals or rice for breakfast would be a good choice. You need to be careful, though: high protein diets can raise blood cholesterol levels and expose you to a higher risk of developing heart disease, so it’s important to have regular blood tests and exercise as often as possible.

Mood Food - What to serve to get you in the mood for love.

Romantic meals are a fabulous way to show him how much you love him. If you want to seriously kick up the heat at the dinner table, make sure you stock it with a full spread of sensual foods that will ignite a little extra passion between the two of you. Here’s a quick primer of culinary aphrodisiacs.

• Grapes.
They are the perfect sweet treat to hand feed your lover. One of the most powerful historical images of seduction involved this fruit being hand fed to Cleopatra by Marc Antony. Pop a few of these bite-size gems into his mouth and you’ve set the stage for an evening (or afternoon) of passion.

• Asparagus. This veggie is reported to have been served in the 19th century to grooms on their wedding days because of its potent aphrodisiac powers. Steam spears for a healthy and sensuous experience, dressing them with butter or olive oil to amp up the sexy flavour.

• Oysters. These little sea creatures are probably the first things that come to mind when thinking about food as an aphrodisiac. Comprised of water, protein and carbohydrates, plus small amounts of fat, sugar and minerals, it is widely thought that these have a powerful effect on the libido. Why not give this decadent treat a try to see if they get your motors running?

• Chocolate. Depending on who you ask, it is better than sex, but can it put you in the mood for love? It has long been revered for its romance-revving qualities and that is apparently thanks to phenylethylamine, a naturally occurring amino acid found in chocolate which has been considered to have special effects because it’s a substance released naturally in the human body when you're in love. Chocolate fondue, dipped strawberries or cake anyone?

• Red wine. When it comes to seduction, musky, masculine reds are best. You may also want to try an earthy Pinot or a burly Cabernet brimming with aromas of leather, tobacco and earth. Remember if you are using wine as an aphrodisiac the scent is key because those vintages containing masculine notes are believed to imitate the scent of male pheromones.

18 salad-bar survival tips

Mushrooms
Not poisonous, hallucinogenic, or nutritious.

Creamy salads
A.k.a. the white death. If you must have some slaw or, worse, macaroni salad (3/4 cup = 26 grams of fat!), at least place it over raw vegetables. The mayo will double as salad dressing.

Radishes

No matter how you slice 'em, these are roots. What's worse, they're roots without a nutritional leg to stand on. You'd need to eat half a cup to take in a gram (g) of fiber, which isn't enough to keep even a rabbit regular.

Alfalfa sprouts
Don't bother with these little health-food frauds. Half a cup provides only traces of nutrients. But they are virtually calorie-free, so if you actually like their dank flavor, knock yourself out.

Carrots
Shredding gives raw carrots a whole new quality: They become edible. Mix, don't top, your salad with a quarter cup of them, and you'll be eating nearly a whole day's worth of beta-carotene.

Cauliflower
Broccoli's bleached cousin has only a fraction of the vitamin C and beta-carotene. You're better off doubling up on broccoli and skipping this pale imitator.

Sunflower seeds
A few spoonfuls have potassium and magnesium to lower blood pressure, plus folate to help prevent heart disease.

Black olives
While these little fat bombs won't hurt your heart, they won't help it much either. You'd need to eat 10 to get just 3 g of cholesterol-lowering monounsaturated fat.

Chickpeas
Despite the name, this isn't something you'd find in Penthouse. Half a cup has 6 g of protein, 5 g of fiber, and some B vitamins.

Hard-boiled eggs
One has 6 g of protein and some lutein and zeaxanthin, phytochemicals that may cut your risk of age-related vision loss.

Cherry tomatoes
Ounce for ounce, these little suckers have as much prostate-protecting lycopene as their big brothers.

Cucumbers
Low in nutrients, fiber, and taste. Maybe that's why people drown 'em in vinegar and call them pickles.

Iceberg lettuce, mesclun salad greens
Nutrient-wise, iceberg lettuce helps your diet as much as real icebergs helped the Titanic. But mesclun greens contain folate, to fight heart disease, and fiber, to spit shine your colon walls.

Cottage cheese
The best cheese choice on the bar. Half a cup of the full-fat stuff has only 108 calories and 5 g of fat, and gives you 13 g of protein.

Broccoli
Six florets give you a day's worth of vitamin C and 20 percent of your beta-carotene. Bonus: Broccoli is rich in a number of polysyllabic compounds that seem to have anticancer properties. Eat all you can stand.

Shredded Cheddar cheese
One half cup of shredded Cheddar has 19 g of fat--about what you'd get in a fast-food taco. Try to limit yourself to a tablespoon.

Mysterious extras (bacon bits, croutons, Chinese noodles)
They're salty, they're crunchy, they're more like pretzels than vegetables. Of the three, the croutons are best. Ten croutons add up to about 50 calories and 2 g of fat. Chinese noodles tend to be greasier. And bacon bits? Well, they're bacon, and we all know how healthy that is.

Dressing
Low-fat dressing isn't low-cal, so go easy on it. A better bet? Canola oil and red wine vinegar. The oil contains omega-3 fatty acids to reduce your heart-disease risk. The vinegar adds flavonoids to keep your blood flowing smoothly.

Vegan diet 'help' for arthritis

Rheumatoid arthritis patients may be able to reduce their high risk of heart attacks and strokes with a gluten-free, vegan diet, a study suggests.

Heart attacks and strokes are among the leading causes of death for sufferers, as the inflammation caused by the disease impacts upon the arteries.

But an Arthritis Research and Therapy study found those who pursued a vegan regime had less "bad" cholesterol.

By clogging arteries, this is seen as a key risk factor for heart problems.

Rheumatoid Arthritis affects around 350,000 people in the UK.

Millet and sesame

But researchers at the Karolinska Institute in Stockholm say this risk could be reduced through a diet which excludes animal products and gluten - found in wheat, oats, rye and barley.

They placed 38 volunteers on the diet, in which protein accounted for 10% of daily energy intake, carbohydrate 60% and fat for 30%.

It included nuts, sunflower seeds, fruit and vegetables, millet and corn. Sesame milk provided a daily source of calcium.

A further 28 volunteers followed a healthy diet with approximately the same proportions of protein, carbohydrate and fat.

Saturated fats were not to make up more than 10% of daily energy intake, and wholegrain products were to be chosen as often as possible.

Those on the vegan diet showed a decrease in the total level of cholesterol and specifically a reduction in the amount of low-density lipoprotein (LDL), also known as "bad cholesterol".

In contrast, those on the non-vegan diet showed no significant variations in these levels.

The researchers pointed to a "large body of evidence" suggesting that these changes were beneficial when it comes to preventing blockage of the arteries and cardiovascular disease.

The vegan volunteers also had a lower Body Mass Index (BMI) at the end of the 12 month period, while the control group remained the same.

The Arthritis Research Campaign, which is currently looking into how statins may reduce cardiovascular risks for sufferers, said the study was of interest but said the role of diet could be exaggerated.

"However we do know that, for example, eating oily fish can reduce inflammation, and risk factors for developing the condition include high consumption of red meat and low consumption of fruit and vegetables, so diet does play a role - however limited," a spokeswoman said.

But the charity also sounded a note of warning: "A vegan diet may be helpful in reducing cholesterol, but it is difficult to get enough of some important nutrients on a vegan diet."
